Any Ideas on what one would read when boosting nitrous WOT?

Wet shot that is. I'm trying to decide if I should get a WBo2 with a nitrous setup.

My other option is exhaust temp.

Depends on your fuel/nitrous ratio--and the ecu. At first you will probably run lean 15.7-16.1. The ecu will take a second and then adjust the main injectors to compensate and run 14.3-14.9. Get a wideband as soon as possible if you are going to run nitrous (wet or dry). Too lean and boom, too rich and your cat converter wont last too long. Innovate Motorsports makes a pretty good one--just going to have to drill an extra bung for the sensor--you can even wire the primary 02 sensor receiving wires into the wideband and the wideband can tell your computer whatever you want.
