Online Degree - 'distance Learning'

I'm looking for an online university so my wife can go back and finish her degree. Can I get some input from any of you? Any ideas, suggestions, personal experience... it's all welcomed.
I've looked into University of Phoenix, and I'd really prefer to NOT look into it any further. My wife talked with a guy on the phone and set up an interview for this weekend. After doing research online, I asked her to cancel before he pressured her to sign up and pay for an application. She did, and he said to let him know whether she would attend because he had ALREADY RESERVED A PLACE in the next session for her. He had no information on my wife, transcript, or any means of obtaining (no SS# or anything) so they apparently reserved a spot for someone with NO academic requirements.
So, what are my options? I'm looking for a recognized university, somewhere worth something. My wife has approximately 80 hours completed from the University of Tennessee, Knoxville with a ~3.5 GPAand she was pursuing a major in Accounting. Most of her credits, if not all, should transfer towards something in a Bachelors of Business Management or Administration... or something similar.

Right now I'm considering ASU, Penn State, or something similar. ASU is an idea, but she'd have to go through the trouble of retaking the ACT or SAT to get in because of the strict admission standards. Penn State is currently our first choice, but they're significantly more expensive per credit hour than almost anywhere else we've looked.
She needs something completely online, a "distance learning" program. We each work 'til 5 or 6pm throughout the week, we're down to one car and I have classes every Saturday from 8-5, and we spend 3-4 nights/week at the Physical Therapist. One problem is UT didn't require a "Speech" class, so anything requiring speech would require her to attend classes somewhere, so we're also looking for a curriculum that doesn't include that.
Price isn't a big deal. She'll start out taking only one class per semester, and Vanderbilt University will reimburse 70% of tuition costs after the course has completed.

I go to college on campus, but my first term I had a class online. If she really wants to do online only, it's cool, but I definitely prefer person-to-person contact.
If price isn't a problem. DeVry is pretty good. That's where I'm going, and it's not bad. They have business programs as well.

she'd prefer a traditional classroom, but as I stated, that isn't an option at this point.
