I live in Hawaii, and here removing the catalytic converter is NOT ILLEGAL so therefore people here do custom exhaust systems and take out the cat. Question, by removing the cat, does that eliminate a lot of restrition on the airflow. Thus, adding ....power?

on a mildly modified car, removing the cat would give you about 2 HP. Sport Compact Car magazine did a writeup on this about 6 months to a year ago. They were using a 2.0L nissan sentra, it's fairly comparable to our motors.

It's just not worth it.
