Try to unpinch that rear hose :

that rear hose is for the Idle Control Circut.. it could be causing some of the problems you are talking about. Not sure of the lack of airflow to it would make the car run rich or if the computer would lean it out to compensate.. but when you tip into the throttle when that is happening, no doubt you are having some serious air/fuel issues.

Ok update.
Solved!
I had to take the MAF and and rotate it a little so that the wires weren't kinked. Then I also un pinch the hose a little.
I threw a CEL. I pulled the negative battery and let it reset.
Now.. Smooth. NP. Let's just see if that holds up.
Quirky.

hye man, you got this of ebay didn't you....i had the same problem what you need to do is just cut the top hose to fit correctly...the top hose is too long. That is all
