Do you ever ask to see the old oil when their done? Just to make sure they really did change the oil and they're not scamming you?

I change mine myself. I started doing it myself after a quick lube place stripped my oil drain.
When I used to go in to get it changed I'd always look at the oil filter as my check.

I intern at a local shop and we would never even think of not doing an oil change and saying we did. It's the easiest thing and most common thing we do, except maybe tire rotations, but oil changes are so easy I can't believe any shop would be lazy enough to not do them and risk problems in the future. Plus if you asked to see the old oil, the shop could just show you someone else's oil. If you are really worried about it then mark your oil filter with a red marker or something so you can look at it after and be sure a new one got put on.
I had mine changed by a shop quite often while I was in college, full time night shift at work plus full time student. The last time they did it they broke the oil pressure sending unit and didnt even notice the oil light on the dash. since then no one else has changed my oil.

My brother in-law has a shop change his oil because he's rich and doesn't want to have oil drips on the driveway. That, plus the extra 15 minutes he would take to change his own oil he could earn more working than he would save doing it himself.
If you are that worried about the shop, go stand outside the bay and watch them work.
