My wife does catering for private parties and has been thinking alot lately about getting away from it. She came up with the idea of owning and running a food truck. There isnt really that many around here so I think it would do ok just for the fact that its not a saturated market. It would be her and her 2 sisters running it.
If you can find a truck that already has everything in it, then it would be a cheap investment. As long as it didnt need any major repairs, and you could get decent insurance, than your wife should be fine.
If you decide to buy a truck with nothing in it, and put all the cooking stuff in it, then you could be looking at the cost of a small mortgage, depending on how crazy you get with it.
There are places out there that deal with those trucks exclusively. Do some research online and see what the best way to go is.

The odds of becoming successful in any sort of restaurant type business is rare, short of already established locations
That being said, like v said, if you cab reduce the initial costs maybe buy someone else's failure you have a much better chance of success
