ATTENTION CANADIANS - I want to make poutine!
but i dont have cheese curds... what are my other options?
and what type of gravy? brown?
or is it all preference?

NO CHEESE CURDS! It's not REALLY a poutine without cheese curds.
You can used shredded cheese if you like, but it's not the same. Nothing beats squeaky fresh cheese curds in a poutine. Gravy... whatever you like.
For anyone in the Ottawa area, this is a small poutine from Chip's and Dairy on Bank street. THIS is what a poutine should look like. It is THE BEST tasting poutine around.

Well the curds are really just chunks of cheese. So really just grab a bunch cheese and cut it down to little pieces or just break the cheese apart.

I live apx 25 - 30 mins away from the plant that makes these things. There is a store in the front where you can buy cheese curds mins after they are made. mmmmmmmmm super fresh cheese curds
