Ambergris Caye island, San Pedro, Belize.
I went with a group of people. We rented a house for a week on the beach. Scuba diving, deep sea fishing, cooked freshly caught black fin tuna and lobster for dinner, spear fishing, kayaking, Mayan Temple trampling at Lamanai... had a ton of fun and did a ton of stuff in the week we were there.
Scuba diving at 90 feet through barrier reef tunnels was the best - check out the M&M video below. Fun stuff starts at 14:00, barracuda at 23:23, second tunnel appears at 24:00.

The flight?
I took AA from Nashville to Miami (2 hours) then Miami to Belize City (2 hours), where I caught a puddle jumper to take me to San Pedro on Ambergris Caye Island (15 minutes). Our flight departed Nashville at 6am and we were in Belize by 10:10, at our house and in the pool before noon. Not too bad at all. But....
On the trip back, our plans were to leave Belize City Saturday morning and spend the night partying in Miami. We took a boat to the puddle jumper and arrived at the mainland airport at 8am. Nothing opened until 9:15, at which point we discovered the flight leaving Miami was cancelled, so we had no flight home. We were first in line (8 of us). They were able to get me on a Delta flight after about an hour of finagling - another couple took about 2 hours to get on the same flight (bumped to first class as those were the last two seats, lucky bastards), and a few others were put on another AA flight going through Dallas. Sooo.... no fun time in Miami, and I got home a day early after stopping in Atlanta for a few hours. The few that went through Dallas spent the night there on AA's dime (food and hotel). In the end, I guess it worked out for the best as it gave me an extra day to rest before heading back to work, and we didn't have a single problem until we tried getting back home. We didn't get through security until 11:30 I think, and our flight boarded at 11:45 so I didn't have time to grab stuff Duty Free before we left.
