ATTN: ALL OF EAST COAST!!!!
Speeding tickets are the least of your worry if you are organizing such an event. Because you are the organizer you can be held responsible for things going bad. A cannonball run is a contest of speed over a long distance therefore you are condoning the use of high speed on a public roadway. As such you can be charged under the criminal code. If it was just you and some friends you would be alright but anyone who does not know you personally is going to rat you out to save their a$$.
For the most part, if it is open to all cars, you will likely end up with kids that have too much money with Corvettes and Saleen Mustangs etc. All which happen to be a tad bit quicker than our cars.
Please do not let this reply keep you from entering as I know you will still have a great time!

I'll come and visit some of you guys in jail when you get busted.
If you are going to enter I suggest you go online and check speedtraps in all of the states you will be passing through. There used to be a very accurate site called www.speedtrap.com that listed known speedtraps in most states. Also there is a very good book available called The Art of Speeding, (if memory serves me correctly). It was written by an ex-state trooper and it outlines everything from how, when and where to speed, what to look for ahead of you and behind you, types of cars each state uses (including recognizing headlights and taillights of suspected marked and unmarked cars during the day and night), etc. Chock fulla helpful information. That is if it is still available.
Good luck.
