Honestly, nothing, and I've been complimented on how my cars still smells brand new in my '01 and '08. The only product I use on my interior is Meguiar's Natural Shine on the dash and plastic bits, maybe 2 times a year max. Every other time I just wipe the dust with a dry microfiber. I leave the windows open every once in a while when It's parked in the garage. Other than that I don't do anything, never even bought one of those air freshener trees.
Some people think I'm odd about cleaning my cars though. I don't even use window cleaner to clean my windows. I just use the chamois I used to dry the car to wipe the interior glass, then clean the leftover water droplets and residue with a dry microfiber.
The only interior product I use, it smells decent and leaves the dash looking new without being overly shiny, and no greasy residue.
