Im gonna be putting LED's on the bottom of my door panels and in the little door cubby under the handle. Whats a good power source to tap into for this?

It depends on when you want them to be on. LED's draw almost no power, so it's not too critical which line you tap into as long as they're on when you want them on. I would be inclined to run them to a switch that's powered when the key is on personally.

^^^^ What he said. As long as you're reasonable with them. As for a power source, I just wired into the door light(which I also changed to LED) so that the eleven 5mm's all light up when the door light comes on. As for the cubby light, I couldn't tell you, depends on how often you want them on. I wired in a completely new setup for my speaker LED's and put it on a switch so that I could have total control over my lights.
