Is it possible to take a bright LED and flush mount it somewhere in the dash and use it as a shift light? What components would I need to make it work like a shift light? Would a single LED not be bright enough, or would I need a cluster of them? Or is this just a stupid idea and should I just buy a light with all the electronics built in, and flush mount it that way?

As a general rule for car modifications:
If you can imagine it, it is possible and has likely been done.
If you can't imagine how to do it yourself, it will cost more than you might want to pay, to have done.

Yes - you can use LEDs as replacement for bulbs. For your application you could use a 5mm Bezel LED Holder Chrome Metal or plastic holder. A prefabricated LED (with appropriate resistor for 12 V and a bit of wire soldereon and insulated) is probably easiest. This 12 V DC indicator iwth buzzer seems to make noise as well so you do not have to look at it.

Don't know. Check forum?

One 5mm LED is bright enough. Just buy some sizes and test them before you put them in - my 5 mm LEDs were too bright.

If I were you I would buy a set with a non dimming light with no color change and replace the light with a LED and/or buzzer.
