5 channel amp vs multiple amps?
so im installing 4 speakers and 2 subs in my car. what are some pros and cons of a 5 channel amp to power all of them or a mono amp for the subs and a 4 channel amp for the speakers.

Do whatever works better for your installation. There's not going to be a notable sound quality improvement, unless one of the choices is absolute sh*t quality.

A 5 channel amp takes up less space but if something goes wrong with it then your whole system is dead. If you get individual amps then if one goes dead then you still at least have the other speakers or sub to play sound.

I just bought a Jensen 5 channel for the truck with Polk's all the way around and a Sony sub. Sounds fantastic. My last Jensen amp lasted 20 years, still works great! I just wanted 1 amp to control them all.
