Stock looking Exaust??
oh i see.... thats a bit tricky. the easiest thing to do is put an electrical cutout somewhere right after the cat and you can get the power you need at the push of a button or a flip of the switch but it will be loud when its open.
If you are going with no cat's, don't even bother with stock looking exhaust.
This is the set up that I have and the car does not sound anything close to stock even at idle. No one will beleve that it is stock including a cop.

Performance mufflers like Flowmaster & Dynomax dont usually come with a tip, so it allows you to choose the muffler tip you want. Look for a tip that is maybe 2.5" instead of a 4" for that stock apperence.
Friend of mine has a 2 chamber flowmaster on his tib , dont know what series but i think its the one all the muscle cars and mustangs and sheet use.
it sounds quite but not stock. its got a low growl to it at low rpms and such and gets pretty nasty sounding at high rpms.
I dont think it helped out his performance any (if anything killed the bottom end) but it sounds pretty dame throaty.
