You’re basically screwing with the metal and changing the paint properties some so could they be more prone to rusting by rolling them?

Changing the paint properties how? The paint seals and protects the metal to avoid rusting. As long as you take your time and be careful, you won't break and paint thus no rusting.
Not many people are rolling their fenders though. The factory setup has more than enough room for even an aggressive setup. Those rolling are fitting 20x11 or 19x11 and slamming.

You should have plenty of room to tuck a bigger tire and not rub. If you do roll your fenders, like they said above...do it carefully. Rolling it won't cause any harm to the paint, but you can crack or chip the paint off...causing it to expose the metal...allowing it to rust.
