Finally got my car up on a lift yesterday, and there's a couple things:
First off, from examining the bottom of my car I really don't think anything is needed for the Oil Pan area. My car sits pretty low and that area was not touched at all (bumper and some of the exhaust showed signs of scraping). I also don't think it needs an additional cover because the oil pan is not by far the lowest part of the car and is in between the wheels. If you're hitting the oil pan, you're doing something wrong.
Next thing; There doesn't seem to be any spots to mount an additional cover. The only possible way I think would be to make a replacement piece for the factory plastic cover/ shroud. This could be fairly easy in either steel or HDP but again, I don't think it's needed.
As to the exhaust and frame, we could make a cover that surrounds the exhaust pipe, but that would reduce the amount of clearance underneath (and scrape more). Also, do to different exhaust designs it would really need to be custom made per car.

So ... Sorry this never materialized. Saw an interesting skid plate on a Jeep the other day, which got me thinking about this.
I have an idea of something that might work, just now to need to find a new local partner who'd be able to make it.
