Sidewall protection with 19" or 20" tires

The bigger in size you go with tires, the smaller the sidewall is. So if you go around a corner kind of hard, it will cause the sidewall to get smaller, right? So in that case...do you take a chance of ruining the rim lip by having tires with such small sidewalls? I know pot holes will ruin rims if you have tires with small sidewalls, but I'm more curious about going around corners.

It would astonish me to see damage JUST from turning too hard. Turning too hard on a rough road, maybe would be less astonishing. It would seem to be against the point of producing tires if just driving would cause damage to the wheels.
No, you won't get damage from turning.
There are people out there running ridiculous amounts of stretch on their wheels and don't get damage from daily driving. Unless you hit a pothole and your unprotected rim hits it, you should be fine for the most part.
See the white part? Yeah, that's rim poking out. He drives it daily and hasn't damaged the wheels. I wouldn't recommend it, but you have nothing to worry about.
