How easy can 11 or 12 inch wheels be put on a Genesis?
In the rear obviously? Do you need ridiculous camber and pulled fenders to do it?

It can definitely be done. No fender pull is needed. Camber depends entirely on the offset. People have fit 20x11 and 20x12 wheels. The most common is 19x10.5 with +20 to +25 offset and that in itself doesn't require much camber... much being VERY subjective depending on who you speak to.
My rear wheels were 19x10.5 +20 and with 255/40/19 I could run -2 to -2.5 camber. Visually it wasn't easy to see the camber and many people considered it subtle. I believe Craig @ Invision Automotion was running 20x11 at one point with an offset between 15 and 20, and he had to add small spacers to clear the Brembo calipers because of the spoke design so maybe closer to a +10 offset. He was somewhere between -4 to -4.5 camber I believe. Here is Craig's car, same wheel specs just different colors:
