Good ride height
My coilovers will be here soon, and I'm trying to decide how low I want to go. I want the car to look good, but don't want the drop to be detrimental to handling.

Drop it so the tire tread is barely tucking in the fenders. Honestly, it depends on what tire sizes you get.
