Whats the difference between something like this and carbon fiber vinyl? Would they both hold up to elements?

That looks like a thick, solid piece that needs to be glued onto the car. It probably holds up and looks slightly better than the vinyl stuff, but could hurt your paint if you ever remove it.

Well, they'll both do the opposite of what an actual CF roof will do (you're adding mass to the highest point of the car), so you're sorted in that department.

I would imagine that very few, if any, would actually cut out their roof to replace it with CF. I understand the principal, and why it's a good thing to do, but it's just too involved.

If you're even shopping for vinyl or the like, a CF replacement roof is out of the question. Honestly, for the cost of any of the above you could get a sheet of colored CF and some resin and do the damn (cover up) job yourself. It's not the same but a lot more respectable than some stupid sticker or glued prosthetic.
