When you say the rear starts to twist, I'm assuming you mean the car starts to oversteer. The rear of the car starts to "step out" around the corner.
This can be caused by a host of problems, and there are just as many fixes. But as it only happens upon braking, My guess is that your rear brakes are not slowing the rear of the car enough, so it is going faster than the front...and thusly wants to lead you down the road.
I suggest you investigate your rear brakes. Bleeding the whole system is always a good thing...you can never bleed your brakes too much! I would also do a through inspection of the back rotors and pads for glazing. If they are glazed over, there will not be enough friction to allow them to fucntion.
Scuff up the rear discs with a green kitchen scrubbie, or some 000 grade steel wool. That should remove the glazing and allow the rear pads to bite. If the rear dics ARE glazed...replace the rear pads with new ones. Chance are your pads are glazed over too!

On the other side, maybe the rear brakes are TOO strong, that when you hit them the tires lock, and then the car reacts like as if you were pulling the handbrake...
Hey Turboman that can happen only if you don't have ABS...If you have ABS the follow Random's advice. If you don't have and the rear disc brakes were installed afterwords then check the front-to-back ballance system (valve) of the brakin system. Inother words take your moster baby to your mechanic...

Tasos-
Good point, the rear could be over breaking to the point of skid/lockup...but I he didn't mention skidding sounds, so I didn't bring that up, but it is possible.
Did you hear skidding noises?

I have the same prob with my tib. I feel like i'm driving a rear wheel drive. I havn't done anything to fix it yet but in my civic I had that problem with only a front strut brace on. When I put the rear and the lower rear on the problem went away. I don't know what kind of suspension upgrades you have but that can make a diff when turning. Especially when you hit the brakes. But I would go with what Random says cause he prob knows more about this than me. Just going from past experiences.
