I opened my hood this afternoon and what did I find but strange remnants of a leak or something on my belts and hoses. There was also a build up of some sort of gunk that I pulled out from there too in the second picture. What is it from?!

That "gunk" is leaking coolant. It is also a slight ammount of corrosion from Hyundai's use of Aluminum in the theromstat housing. The stock, OEM hyundai hose clamps suck rocks. Next time you drain/flush your cooling system, I highly suggest you replace them all with high quality 'T" clamps.

Is it something I should worry about and get fixed/changed immediately or is it not a big deal and slightly common?

It's fairly common. No big deal, but the T-Clamps will solve it. When you take the rad hoze off, you'll be amazed at the pitting and corosion on the Thermostat housing attachment points. I've yet to find a cure for the corosion, but the cure for the leaking is beter hose clamps.

It won't cause any damage, as long as you keep your coolant level at the proper point.
