On my motorcycle, I just use Chrome polish. I use Simichrome.
You slather it on, let it sit for about 15 minutes, then I attack it with a polishing wheel and my dremel. Takes about 1 hour, but they look brand new when I'm done.
If you're not in the mood for this, just applying the simichrome and wiping it off does a fairly good job.
However my headers on my Motorcycle always get dirty/discolored agin within a month...so I only do it about once a year.
If you were to get the headers ceramic coated, you wouldn't have to worry about the discoloration, and you can just clean them off with a wet rag (when their cold that is!)
