So, I have a Samsung Galaxy S 4G phone. Its about a year and a half old, and I plan to upgrade to the Galaxy III in a few months when I'm eligible for a full upgrade. Anyway, theres been a software upgrade for awhile to Gingerbread via Kies Mini. The phone isnt rooted but I plan on doing it in the next couple of days. I upgraded and went from Froyo expecting Gingerbread to be this amazing thing and really wow me beyond expectations.
Honestly, other than a couple of color changes and different looking icons, I see no real big major difference. Am I missing something I havent seen yet or is Gingerbread not really all that great of an update that changes alot?

The biggest changes are the APIs which drive things behind the scenes. They do make large changes to the UI. Gingerbread introduced hardware acellerated animation rendering across the UI. However everything you see on a Samsung Galaxy series device is not what Google made, its called Touchwiz... a manufacturer variant of Android... a rather tasteful variant, but still not quite AOSP.
I'm writing this on my Nexus7 running 4.1.1 Jelly Bean. My phone is a Galaxy Nexus also running 4.1.1. I have a Galaxy S1, an Infuse4g and a GalaxyS2... I must say, you should consider forking out the $350 for a Galaxy Nexus phone and $250 for a Nexus7 tablet. If you ever wondered what Android is like before it was Samsung'd, its easy to see when you use the devices Android was designed for.

i eventually plan on doin some HAXXORZ to it but for now im just trying to figure this damn thing out so far ive been quite impressed with it

Faith. Also keep in mind you were using HTC Sense Donut and you switched to TouchWiz ICS.
HTC still has a sensy feel.

Oddly, I was also on an HTC Incredible and switched to a Galaxy SIII.
I also have an Asus Transformer.

Wheel, Android versions are named after a desert in alphabetical order the versions were
Android

Eclair
Froyo (frozen yogurt)
Gingerbread
Honeycomb
Ice Cream Sandwich
Jelly Bean
And, we speculate the next one will be Key Lime Pie.
