Are you doing some virtualization?
NAT= Network Address Translation. A NAT is a type of firewall which will allow connections to be initiated from the inside to the outside, but obscures references from the outside to the inside. A NAT firewall is a good choice if you want to maintain invisiblility of the servers and workstations inside the NAT. Usually this is used in situations like a home network. NAT is used to prevent the internet from having access to your computers while letting your computers access the internet. It is security through obsfucation and disassociation. There are ways through NAT, but most must be preconfigured at the router.
Bridged= Network Bridge. A network bridge basically extends the network so that the bridging device will relay commands into the bridge as though it were directly connected to the network. Ie... Say you had a laptop connected to a desktop which was connected to the network. You could enable a bridge and the laptop would see the network and the network would see the laptop just as though it had the same connection as the Desktop did via the desktop's bridge.
Local = Local connection only. There will be no network in this mode. This allows only 2 way communication between the two devices. This is similar to bridged, but the bridging computer does not relay the information to the network.
Here's a quicker rundown.
Local = locked down
NAT = security without lockdown
Bridged = No security.. Open network.
