I have had the chance to taste different steaks throughout all the ranges of preparedness and have found that medium to medium well has the best taste without the blood/soggy aftertaste. I have even had beef tartare which was disgusting for how much it cost.

Because they want to eat your heart out, fresh. I don't understand why the pro-feshunul chefs hate cooking meat. Meat tastes like blood, which tastes terrible. As a rule: if it used to be able to move under its own muscle power, spice it a little, cook it, no matter what it is.

because its dry and there are no juices which make the meat itself

beef has flavors and textures that are cooked out when you give it too much heat for too long. you turn your steak into a hamburger because all the flavor is already left the meat.

if you want well done go ask for hamburger, if you want a steak nothing more then medium well. and thats really too much

Try overcooking a pork chop if you want to ruin something.

I think the jewish lawmakers got it right. They command that you don't eat the flesh off an animal while it's still alive.

This......Taking all the juice out of it really makes a dull, dry, flavorless meal. Not saying it has to be mooing rare, but if you want well done, move on to the cuts that are made for it....brisket, chuck, whatever. At least in braising, the liquid you cook in keeps the meat moist and flavored.

My steaks are always medium with nothing but fresh ground pepper on them.

I myself like my steaks Medium with a very small amount of salt and ground pepper. I like to taste the meat. No butter, no gravy, just a very pinky medium steak. I usually only prefer the salt if it's more towards medium well or well. It brings out the juices in my tongue for those that may be lacking in the steak.
