You ask me for something well done, it's going to taste like crap. Well done does ruin the flavor of the product as far as i'm concerned. The only thing that should be well done is a braised dish, or some other form of otherwise tough cut of meat. I don't think there is room to complain about a well done steak either, especially one that thick! Of course it's a little crisp! You want a cut of beef that thick to be done well all the way through, the only way not to char it a little is to butterfly it.
I eat my steaks Medium because I enjoy the flavor of the beef, not the flavor of char or shoe leather.

Has nothing to do with my palette at all, I have a few friends that are chefs and if you order welldone they will give you a smoldering hunk of char.
Anything over medium well pretty much destroys the flavor of a steak.
