I was thinking about this earlier because I usually get fish frys on friday nights. When I see "fresh catch of the day" on menu's, to me it screams old fish that the restaurant needs to get rid of before it spoils.
What are your thoughts? Do you think it is actually fresh caught, or old leftovers they are trying to get rid of? Anyone work in the food industry that can comment?

....and its location. If they're on the east or west coast, catch of the day could very well be that day, or day old at the oldest. If you're ordering the catch of the day in Montana, it better be fresh water or i'm not ordering, lol. The further away from the water source you are, the longer that "catch" is on a truck. Even if it is fresh to the establishment, it doesn't mean it is fresh from the water.
^- +1 - I live right by the water and a lot of restaurants still use regular supply lines to get their stuff. Very few actually have their own boat or buy directly from a boat. Especially after the BP thing Fing up the gulf.
