Don't have a lot of time but i'll get you started. Let me know what kinds of things you like and I'll get you some healthier alternatives.
<u>Canadian Bacon & Cheese Pizza w/ Tomatoes & Basil</u>:
-1 6 inch whole wheat pita split in 2 pieces.
-4 tsp. dijon mustard.
-4 slices Canadian bacon, cut into 1/2 in. dice.
-16 cherry tomatoes, halved.
-Generous1/2 tsp. dried basil.
-2 oz. shredded sharp cheddar cheese.
Use lowest setting for oven rack and preheat oven to 400. Place pita's on a cookie sheet and spread the mustard on the halves evenly. Put on toppings in this order: Bacon, tomatoes, basil, cheese. Bake until pita's are crisp and cheese is melted, about 10 minutes.
Please note that this is not my recipe. The book is entitled The Perfect recipe for Losing Weight and Eating Great by Pam Anderson.
There are many variations on pita pizza in there depending on what you like, as well as many other recipes. Stacey, like I said, let me know what kinds of things you guys enjoy and i'll find you something good in there to try as a substitute wink.gif

Cool. let me work on it a bit. Have to winterize the car today and work everyday this week, but I'll see if I can't squeeze in a couple recipe's here and there.

It's not spicy at all. More sweet than anything. Usually garnished with plantains.
