No companies are currently interested in commercializing these sausages, Jofré noted.
I'm not worried. Where do you think they culture the bacteria in many of our foods from?

That's actually a really good point.
If anyone watches Anthony Bourdain's show on CNN he had an episode that featured Chef René Redzepi. This guy makes edible reductions from common molds and otherwise spoiled foods, and makes them into not just edible but also (apparently) delicious dishes. The technology in today's kitchens is insane.
