Default Boston Globe expose on Sushi...that's not the fish you think it is...

http://articles.boston.com/2011-10-2...-foods-escolar

A Globe investigation detailed yesterday found that mislabeling of certain fish is endemic in the Boston area. DNA testing showed that 32 area restaurants that serve sushi - including Takara Sushi in Newton, Basho Japanese Brasserie in Boston, and Kowloon in Saugus - sold misnamed fish. For instance, tilapia stood in for red snapper, and farmed hybrid bass was identified as wild striped bass.

Overall, the testing revealed that nearly half of 183 fish samples collected at restaurants and supermarkets were not the species ordered.

The article is too long to quote the whole thing, but CN = Boston Globe does 5 month investigation into fish and sushi being sold at local restaurants. They do DNA testing on over 180 fish and find over half of them are a different species of fish then what is on the menu.

when I worked at a seafood restaurant, we had Orange Roughy on the menu. We'd substitute with tilapia if there was a problem with availability or price. They're similar enough most people would never know the difference.

To me, sushi has minimal flavor anyways. It's usually the nasty sauce the put on it or the overpowering wasabi that I taste.

btw, I ♥ sushi nigiri > rolls anyday
