Cut one coil off your stock springs and you will be fine. Cut two off a stock spring and you're looking at the potential hazard of the spring coming off the perch at full suspension droop. Trust me: with one coil off, there is PLENTY of force holding the spring on the perch still. Yes it changes the rate. That's fine if you don't mind a little more stiffness. I didn't notice the difference in spring rate myself, and I notice *tiny* changes in my car. YMMV and a progressive aftermarket spring might be a different story.
A bolt-on-leave-on spring compressor is as ghetto as cutting a coil off, and just as much an accident waiting to happen as a cut spring. See how much fun it is when the compressor fails at the worst possible moment (turning at speed near a wall)
