Chris...with 215x40's on 7.5" wheels you should not have any rubbing problems stock, or lowered unless your wheel offset is a +35 or lower...
I've got the same setup (no drop) and I do not rub, but my wheels are +36 offset.

Must be the off set then!?
As I said i have no over hang whatever, not even an tiny one, but thanks to the guys at my body shop they roled the rear lip under the rear wheel arch and hey presto no rubbing.
ALso the rubbing was only under full load and heave cornering
