Turbo question
Does the size of the motor a turbo is on affect anything other than the spool up characteristics? It doesn't affect the volume of air the turbo is actually moving, does it?

Of course it does
An engine is an air pump, a turbo is an air pump. Revs, displacement and boost are all highly relevant to how much air flows through the system.
