Ok, I know how to upgrade my non captive tib with these 11" sonata rotors and GK calipers, but what about the older captive tibs?

Do we have to change it to non captive first an then upgrade to 11" rotors or is there any 11" system for captive tibs?

I belive you have to do captive - to non-captive swap.

So you will need:
non captive hub, spindel, 11" brake disks, XG/SantaFe calipers and pads.

If you're captive...you're screwed. You'll have to do the hub/spindle swap.
