With a wet kit, is it safe to fill up with 87 octane fuel or should you always be using 91 or 93 when you know you plan on using nitrous? This is with a stock ECU obviously and no tuning.

Any time you increase the amount of oxygen going into the combustion chamber you need to worry about detonation. I would say if you had someone way to retard your ignition timing when the N2O was active you would be fine on lower octane fuels, but since you don't you would be relying on the Hyundai computer to sense the knock and retard. Problem with that strategy is that when your off the bottle the ECU would add the timing back in over time so when you hit the switch you would probably detonate again.
You may be able to get away with a really low shot and not detonate but to quote Clint "Do you feel lucky, punk?" lol
