I always thought the stock rads were fine, even with built up gencoupes. At what point is an aftermarket one needed?

When you start overheating, or really more specifically when you see that your temps don't hold at a stable reasonable max temperature under load, but before you overheat the engine. I don't know what power level that would typically be on a GC, but if you're concerned an accurate temperature gauge might be a good idea.
