Engine is lean... how to check?

I believe my engine is runing lean. It gets INCREDIBLY hot and requires the pedal to be pressed down quite a bit. This all happened after I changed my fuel pump from one that leaks to one that does not. Ever since, I've had to press the pedal down further to get the car moving. It is a carbureted car, if that helps. HOW can I check (not via spark plugs) if my engine is running lean?

Eh, block head, whazzup?

Use can use an exhaust gas temp sensor or (I know you don't like electronics on cars) a Oxygen sensor, but just hooked up to a LED box since it wont mean anything to a carbed engine.

P.S

Block head when are you gonna get your spare cylinder head cleaned?
